Shrimp Alfredo with Linguini

Ingredients:

  • 8 oz. uncooked linguini, broken into thirds
  • 1 1/2 C. frozen sweet peas
  • 1 C. light Alfredo sauce (either refrigerated or from the shelf -- check for lowest fat version)
  • 1/4 C. dry powdered milk into which stir 1/4 C. water ( OR 1/4 C. skimmed milk)
  • 1 lb. shelled deveined cooked medium or large shrimp
  • 1/2 tsp. dried basil leaves
  • 1/8 tsp. pepper
  • nutmeg to taste
  • salt to taste

In spaghetti pot, cook linguini to desired doneness as directed on package, adding peas during last 2-3 minutes of cooking time. Turn burner to low. Drain spaghetti and peas in colander.

In the same spaghetti pot (no need to wash it), over low heat, combine Alfredo sauce, milk, shrimp, and seasonings. Mix well.

Add cooked linguini and peas. Cook 4-6 minutes or until thoroughly heated, stirring gently but nearly constantly.

Top portions with grated Parmesan cheese, if desired.
