Broiled Sole with Almonds

 Ingredients:

  • 11 oz. fillets of sole
  • 2 tsp. Land O Lakes Light Butter
  • 1 tsp. lemon juice
  • 1/8 tsp. paprika
  • 1 tsp. sliced almonds

Rinse fish and pat dry. Melt butter in a shallow ovenproof serving dish. Tilt dish to coat bottom with melted butter. One at a time, add fillets; turn to coat evenly with butter. Sprinkle with lemon juice. Sprinkle with paprika.

Broil 4 inches from heat about 3 minutes. Sprinkle with almonds. Broil about 1 minute more, until fish is opaque and flakes easily.

Serves 2. Less than 6 g. fat per serving.
