Trudy's Onion Pie

Ingredients:

  • Uncooked pastry for a 9" pie (from store or see recipe below)
  • 3 or 4 large onions
  • 2 T butter or olive oil
  • 8 oz. (1 cup) sour cream
  • 8 oz. (1 cup) cottage cheese
  • 8 oz. (1 cup) grated Muenster or brick cheese
  • 2 large eggs
  • 2 T flour
  • 1 tsp. Mrs. Dash Original
  • 1 tsp. salt
  • 4 slices bacon cut in half

Slice or dice onions, sauté in butter until transparent. Put sour cream, cottage cheese, eggs, flour and seasonings in food processor or blender; process until smooth.

Turn onions into pie shell; pour sour cream mixture over onions. Sprinkle grated Muenster over top and arrange raw bacon slices on top of cheese.

Bake at 350 degrees for 60 minutes or until a knife inserted in the middle comes out clean.  Serve with a green salad and Colombian coffee. This recipe looks nice enough for company when baked in a 9" springform pan. 

MARIE'S EASY PIECRUST

  • 2c. all-purpose flour
  • ¾ cup shortening
  • 1 tsp. salt
  • ¼ cup cold water

Measure flour into bowl; remove 1/3 cup and put in small bowl with ¼ cup water, set aside. Add shortening and salt to flour, mix with pastry blender just until combined. DO NOT OVER MIX!!! 

Mix flour and water, pour evenly over shortening mixture.  Mix again until combined. Let pastry rest 10 minutes.

Divide dough in half. Roll one portion out on floured board (paper towels, counter, making a rough 9" circle for the bottom.  Use half the remaining portion to make a 2" wide rectangular strip for the sides.  Daub cold water on the edges to glue it together. This goes in the springform pan; otherwise, you can use this recipe to make a traditional double-crust pie.
