Valentine's Day
   Bouillabaisse for Two

Ingredients:

  • 2 Tablespoons olive oil
  • 1 clove garlic, minced
  • 1 cup green onions, chopped
  • 1 Tablespoon parsley, chopped
  • 1 cup clam broth
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • 10 raw prawns, cleaned and shelled
  • 12 whole scallops
  • 1 whole lobster (1 pound), cut into 2-inch squares
  • 14 clams in their shells *thoroughly scrubbed)

Preparation:  For this dish, use a casserole dish (8 inch diameter & 3 inches deep) that is ok for the stove top.

  1. Heat the olive oil in the casserole over a very low flame.   Add the onions and garlic.  Cook slowly for 3 minutes, then add the parsley.  

  2. Remove the casserole from the fire, then add the clam & vegetable broth, and salt and pepper.  Blend well, then add raw prawns, scallops, and the raw lobster.  The clams should be added last, on top of the other shellfish.

  3. Cover the casserole and simmer for 15 to 20 minutes, or until the clam shells open.
