Valentine's Day
   Crusty Oven-Fried Chicken

Ingredients:

  • 1/4 cup soy sauce
  • 1 tablespoon salad oil
  • 1 clove garlic, minced or pressed
  • 2 to 4 chicken legs with thighs attached (about 1/2 pound each)
  • 2 tablespoons fine dry bread crumbs
  • 1 tablespoon sesame seed
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
Preparation:
  1. Combine soy sauce, oil, and garlic.  Arrange chicken in a single layer in a shallow baking dish.  Pour soy mixture over chicken, turn chicken to coat all sides, and let stand for about 10 minutes.

  2. Meanwhile, mix together wheat germ, bread crumbs, sesame seed, chopped parsley, pepper, and paprika.
  3. Lift chicken from marinade, drain, then turn over in wheat germ mixture to even coat all sides; shake off excess.  Arrange coated chicken on a well-greased rimed baking sheet.
  4. Bake, uncovered, in a 350 degree oven for about 1 hour or until thigh meat near bone is no longer pink.
