Bonnie's Maritime Fish Chowder
(Canadian)

Bonnie tinkers with this recipe a lot.  Try cod, or maybe even clams as the seafood item.  Try the new fat free evaporated milk instead of 2%.  Try NOT draining the broth when the potatoes and onions are done.

Ingredients:

  • 1 lb. haddock (or any solid fleshed fish)
  • 1 medium onion chopped
  • 1 can 2% evaporated milk
  • 3 c diced raw potatoes
  • 1 can (use the evaporated milk can) regular milk
  • parsley, marjoram, pepper to taste. Dash of paprika and dab of butter.
  • Salt to taste

Put the potatoes and onion in saucepan with enough milk to cover. Place fish on top of potatoes. Boil until potatoes are done. Drain. 

Add milk, spices, butter. Heat, but do not boil. Salt to taste.

Add paprika just before serving.
