Pippa's Potatoes (South African)

Pippa says, "I was thinking that good with the chicken would be this baked potato dish."

Ingredients:

  • a "good pile" of potatoes
  • butter
  • salt & pepper
  • 1/2 c. cream or milk

Peel a good pile of potatoes and leave them in water until you are ready to prepare the dish for baking, or the potatoes will discolour. Slice them very very thinly, and place a first thinnish layer on the bottom of a buttered baking dish. Sprinkle with salt and ground pepper, or white pepper if you don't like the brown speckles the pepper will make. Put a few little knobs of butter here and there on the layer of potatoes, add a second layer, and continue with the butter and seasoning each time, until you have enough.

Pour over the top half a cup of heated cream, or milk, if you are worried about the fat.

Bake at 325F (about 160C) for about an hour, until ready to serve.
