Disclaimer:  This is not low fat nor low calorie nor easy, but Bernie swears it keeps him busy and not in a drinking mood while making it. ~Marianne H.

Cream Puff Batter:

  • 1 cup water
  • 3/4 cup oil
  • 1 and 1/4 cups all purpose flour
  • 1 and 1/2 tsp. baking powder
  • pinch salt (1/4 tsp.)
  • 4 eggs

In a medium saucepan bring the water and oil to a boil.   Combine the flour, baking powder and salt.  Remove the hot water-oil from the heat and stir in the flour mixture.  Slowly beat in the eggs with a wooden spoon until a thick batter is formed.

Bag out the batter ( a spoon will work) onto a parchment lined pan (a lightly greased cookie sheet will work) into the desired shape.  (2-3 inches round for puffs or 4 inches long for éclairs)

Bake in a 375 degree oven for 40-45 min.  (Should sound hollow when done)
