Ingredients:
- 8 ounces of Philadelphia Cream Cheese softened
- One 12 ounce package of chocolate morsels
- 1/4 teaspoon vanilla (you can add other extracts for more
interesting flavor as well)
- 1/4 teaspoon of instant coffee
- 3 Jumbo Eggs, separated
- Lots of to sugar to 'eyeball' ("I don't do much in the way of
measuring!" says Shipmate.)
Important fact - take a stainless steel bowl and freeze it the night before. Put
the egg whites in the stainless bowl just before you're ready to start. Add some
sugar to the eggs to whip them up before you begin cooking. Taste it to your own
palate when all whipped up. They do whip up easier and fluffier in the frozen
bowl. Don't let it sit too long.
In another bowl, put egg yolks (or egg substitute if so inclined). Add sugar to
that mixture, again, use your own judgment. Fake sugar, Equal or Sweet n Low can
be substituted.
Next, you can use a pre-made graham cracker crust or make your own with some
crumbs, butter, and you guessed it, more sugar. If you use a spring form pan
which I recommend, line it with parchment or wax paper and butter it
accordingly.
Now you are going to melt the chocolate chips in a fry pan. Add in some more
(you guessed it again) sugar for your own taste buds, the instant coffee and
vanilla. Add that to the cream cheese that's in a bowl big enough for mixing and
fold it in. Once that's in the bowl, add the egg yolks, and after that the egg
whites. The order of adding the ingredients makes it tastier and made with lots
of love.
Put the entire mixture in the pan and bake at 350 for approximately 45 minutes,
depending on the size of the batter, pan, and oven. Start with 30 minutes and
check it to see if toothpick is clean.
