    Oatmeal Pancakes

Just like grandma used to make -- but without the unneeded fat or eggs! You can premix the dry ingredients the night before so all you need to do is add  in the morning is the water and maple syrup.

Ingredients and directions:

  • 1 cup whole wheat flour
  • 1/2 cup oatmeal
  • 1 tablespoon aluminum-free baking powder
  • pinch of salt
  • few shakes of cinnamon
  • 1  tablespoon maple syrup
  • 1 cup water

In a medium-sized bowl, combine the dry ingredients, then stir in the maple syrup (or pancake syrup) and water. Don't forget to add the maple syrup or the pancakes won't brown!

Cook on a non-stick skillet over medium heat until bottom of pancakes are brown, then flip and cook the other side.

Serve with fresh fruit and maple syrup.
