lad or Missing Tuna Sandwich

This recipe actually makes two slightly different sandwich spreads, depending on which first ingredient you use. Tofu will create a smoother, more egg-like filling; mashed garbanzos are slightly drier and create a Missing Tuna filling.

Ingredients:

  • 1/2 lb. MoriNu firm, reduced fat tofu OR
  • 1 can drained and rinsed garbanzo beans
  • 1 entire green onion, chopped and/or
  • 1 rib celery, chopped
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons fat-free Nayonaise
  • 2 teaspoons stone ground Dijon mustard
  • 1/4 teaspoon each cumin, turmeric and garlic powder

Mash the tofu with a fork OR mash the garbanzos with a potato masher, then combine with the rest of the ingredients.

Make sandwiches with whole wheat toast or bread of your choice and add lettuce and tomato if desired.
