There's nothing better than a bowl of soup on a cold winter day.
These two soups, Minestrone and Split Pea are both low fat and vegan.

Minestrone Soup
Ingredients and directions:
- 1/2 lb. fideo (or other thin spaghetti, broken into pieces)
- 6 cups water
- 2 cups Italian style pasta sauce
- 1 can pinto or chili beans, rinsed and drained
- 1 can corn, rinsed and drained
- 2 cups thinly sliced carrots
- 1 cup thinly sliced celery
- 1/2 tablespoon or 2 cubes vegetable bouillon
- 1/4 cup nutritional yeast*
- 1/2 teaspoon (or to taste) garlic powder
This is a one pot soup! Add the bouillon cubs, veggies and pasta to the
water and boil until tender. Then add the rest of the ingredients, stir
and enjoy.
Split Pea Soup Ingredients and directions:
- 1 pound dry split peas
- 7 cups water
- 6 to 8 large carrots, cut up
- 1/2 head of celery (including leaf ends)
- 1 large onion
- 1/2 cup nutritional yeast*
- 1/2 to 1 teaspoon garlic powder, or to taste
- pepper to taste
Chunk veggies then place all ingredients in a crock pot. Cook on high
for six hours. Remove veggies from pot and when they're cool, whoosh
them in a blender until smooth. Return to pot, stir in and enjoy!
You can also use a hand blender directly in the crockpot to blend the
