Succotash

This is good cold as a salad or warm straight from the pan.

Ingredients and directions:

  • 1 can corn, rinsed and drained
  • 1 can stewed tomatoes
  • 2 zucchini squash
  • 2 yellow squash
  • 1 cup frozen lima beans
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian herbs

Cut squash into bite sized pieces and then sauté it and the lima beans in a small amount of water in a nonstick frying pan for 5 to 10 minutes until limas are thawed and squash is tender. Add remaining ingredients and stir until everything is hot.
