   Scrambled T'eggs

How to fool those meat eaters in the family who think breakfast is just not the same without eggs on their plates! I don't make these very often but my husband always says, "I didn't know we had eggs."

Ingredients:

  • 1 pkg MoriNu firm or extra firm tofu, drained
  • 1/4 cup dry oatmeal
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • a few shakes of Italian seasoning
  • salt and pepper to taste

Using a fork, mix the tofu with the oatmeal and seasonings until you have chunks the size of scrambled eggs. Be sure the seasonings are mixed thoroughly with the tofu.

The mixture won't seem as yellow as beaten eggs but the turmeric will turn more into a "scrambled egg" color as it cooks.

Warm the mixture in a nonstick frying pan or nuke it in the microwave, covered for minute or two.

These are good with Oatmeal Pancakes, or served with steamed broccoli and Cheeze Sauce.
